大阪新町にある「カドヤ食堂総本店」の中華そばは、鶏と鰹節のスープが特徴で、非常に澄んだ淡麗系として知られています。私自身も訪れた際には、その繊細な味わいに感動しました。スープはキレがありながらも旨味がしっかりと効いていて、一口すすれば唇がしっとり潤うほど保湿性の高い質感が印象的でした。自家製の平打ち麺は、まるで素麺のように滑らかで喉越しがよく、淡麗スープと見事なハーモニーを生み出しています。焼豚は脂の乗り具合が程よく、量も多すぎず少なすぎず、年齢層問わず満足できるバランスです。特に驚いたのは、最後に残ったスープに白米を沈めて頂くスタイル。これはまさにこの店の真骨頂で、旨味を余すことなく吸ったご飯が絶品でした。大阪のラーメン店は競争が激しく、価格帯も幅広いですが、この店では少し割高ではあるものの、その価格に見合うだけの価値が十分に感じられます。実際に訪れた際は行列も覚悟ですが、回転はスムーズでスタッフの男性陣がテンポよく切り盛りしており、ストレスなく食事を楽しめました。中華そばとつけ麺、どちらが良いか迷うところですが、この店の淡麗系スープは中華そばのほうがその繊細な旨味を存分に堪能できると個人的には感じています。大阪ラーメン界の貫録を実感するなら、間違いなく外せない名店の一つです。
