spring is in the air, and colorful produce is in season. if you haven’t hopped on this trendy side dish/salad topping, you simply must! I made it my own for us and worked with what I had, but it remained so versatile and had amazing crunch factors and bursts of fresh flavor!
mix 2 diced persian cukes & 10-12 sliced mini sweet peppers into a mixture of 1/3 cup evoo, 1 tbsp chili flakes, and 1 tsp fresh grated ginger (would’ve been so good in this!)🌶️🫚 that’s IT! feel free to add whatever else you’d like (sesame seeds, chili oil, the works)
You know that viral cucumber pepper salad everyone's raving about? Well, I'm absolutely hooked, and I wanted to share some of my favorite ways to customize it and make it even more amazing! While the basic recipe is fantastic, I've found it's incredibly versatile, perfect for making it truly your own. First, let's talk about the 'pepper' part, especially if you're thinking of a '3 pepper salad' twist. The original calls for mini sweet peppers, which are wonderful for their mild sweetness and crisp texture. But don't stop there! If you love a little heat, try adding some thinly sliced jalapeños or serrano peppers – just a little bit can transform the flavor profile. For a beautiful color contrast and a different kind of crunch, I often throw in thinly sliced bell peppers – red, yellow, and orange work wonders, creating that vibrant 'three pepper' look and feel. Shishito peppers, quickly blistered, can also add a unique smoky touch if you're feeling adventurous. The key is to get a variety of textures and flavors. And for the 'cucumber' (or 'cucbet' as some might search!), Persian cucumbers are my usual go-to because they're seedless and have a thin skin, meaning no peeling required! But English cucumbers also work beautifully if you scoop out the seeds first to prevent too much water release. Even regular garden cucumbers are great, especially if you peel them and remove the seeds. I always aim for a nice dice or thin slice; the bite-sized pieces make it so easy to enjoy. Now, about that dressing! The simple EVOO, chili flakes, and grated ginger is a winner, but I love experimenting. For an Asian-inspired twist, I sometimes swap out some EVOO for sesame oil and add a splash of rice vinegar and a dash of soy sauce. A squeeze of lime juice or a tiny bit of honey can also brighten things up. If you like a creamy texture, a dollop of Greek yogurt or a swirl of tahini can create a completely different but equally delicious experience. Beyond the core ingredients, I've discovered so many wonderful add-ins. To boost the crunch, toasted sesame seeds are a must, but crushed peanuts or cashews can add an extra layer of texture and richness. Fresh herbs like cilantro, mint, or dill really elevate the freshness – I’ve found a sprinkle of fresh mint is particularly refreshing on a warm day. For a more substantial side, I sometimes toss in some halved cherry tomatoes, thinly sliced red onion (quickly pickled if I have time!), or even some crumbled feta cheese. If you want to make it a light meal, grilled shrimp, pan-seared tofu, or chickpeas are fantastic additions. Serving this viral cucumber pepper salad is also super flexible. It’s obviously a perfect side dish for almost any meal – I love it with grilled chicken or fish. But I’ve also used it as a fresh topping for tacos, grain bowls, and even on toast with a smear of hummus. It’s also a fantastic potluck dish because it travels well and always gets rave reviews. I usually make a bigger batch than I think I'll need because it disappears so quickly, especially after chilling in the fridge for about 30 minutes to let the flavors meld.
