Smokey Chicken Meatballs with Tomato Cucumber Salad + Hummus

Today’s lunch is last night’s dinner, and honestly… I think it might taste even better the second time around. 🤭

I make this bowl regularly. It's smoky chicken meatballs over plain hummus with a fresh tomato cucumber salad on the side. The cool, crisp vegetables balance out the smoky seasoning perfectly, and the hummus ties everything together.

I would have liked to have warm naan bread with it today, but we ate every last piece at dinner last night. 😂 If you have some on hand, definitely serve it alongside this bowl.

One change I made to the original recipe was swapping the zucchini for cucumbers in the salad, and I don’t think I’ll ever make it any other way.

For the Smoky Chicken Meatballs:

* 1.1 lb ground chicken

* ½ onion, grated

* 2 cloves garlic, minced

* Zest of 1 lemon

* Parsley stalks from 1 oz fresh parsley, finely chopped

* 1 tbsp olive oil

* Salt & black pepper, to taste

For the Smoky Spice Blend:

* 1½ tsp smoked paprika

* 1/2 tsp brown sugar

* 1/2 tsp ground cumin

Mix the spice blend together and divide it in half. Sprinkle one half over the meatballs before refrigerating. Mix the remaining half with olive oil to create a smoky glaze, then brush it over the meatballs before baking.

For the Cucumber Tomato Salad:

* 2 cucumbers, diced

* 1 cup cherry tomatoes, halved

* ½ onion, finely diced

* Leaves from 1 oz fresh parsley, chopped

* Juice of 1 lemon

* About 2 tbsp olive oil

* Salt & black pepper, to taste

Toss everything together and serve over hummus alongside the meatballs.
