自宅でクリームチーズ＆苺ジャム入りクランブルパンを作るとき、私も何度か発酵や焼き加減で苦労した経験があります。特に発酵はパン作りの中で最も難しいポイントだと思います。70分の一次発酵中に生地が過発酵になってしまうと、膨らみ過ぎて形が崩れたり、焼いたときに色がつきにくくなることがあります。私の場合はメーカー推奨の温度や時間で管理しても室温の変化やイーストの活性度によって発酵が進みすぎてしまうことがありました。そこで、発酵の進み具合は見た目や触感を頼りに調 整し、目安時間内でも生地がぷっくり柔らかくなっていれば次のステップへ進むようにしています。 クランブルの焦げもよく起こる失敗です。バターや砂糖の配合でサクサク感が増す一方、表面の焦げやすさは焼き時間や温度で調整が必要になります。焦げそうなら途中でアルミホイルを被せたり、予熱後に温度を下げてじっくり焼くなどの工夫をおすすめします。 クリームチーズと苺ジャムを均一に巻き込むコツは、生地を平らに伸ばした後に必要量を点状にのせてから、均等に伸ばすこと。丸める時はあまり強く巻きすぎずふんわり包むことで、中のフィリングが溢れたり生地を痛めるのを防げます。 パン作りは失敗も多いですが、出来上がったパンの味わいは格別です。私も何度も試作を重ねた結果、少しの工夫と失敗から学んだ技術でより美味しいクランブルパンを楽しめるようになりました。このレシピを参考に、自分好みの甘さやフィリング量を調節して、ぜひ焼きたての香りと食感を味わってみてください。
