I love making a modified Caprese salad for lunch! It hits those savory notes without being too much. While not a true Caprese, it’s heavily inspired by one.
To make this I just put down some greens, add some form of tomato and mozzarella. Then, I mix together avocado (or olive) oil with some balsamic vinegar and add some spices. I try to use either basil or a spice mix that contains basil. I personally like to use Penzy’s sandwich sprinkle! You can also just use balsamic vinaigrette, but I prefer this because I control the vinegar to oil ratio.
