My son's "refill!" won't stop.
Without holding a knife,
There are days when hand-torn cabbage is the best treat.

[Ingredients] (for 2-3 people)
· Pork top 250 g
・ Potato starch tablespoon 1
· ½ small cabbage
· Grated garlic (tube) tablespoon 1
・ Ketchup tablespoon 1
· Soy sauce tablespoon 1
・ Peanut cream tablespoon 2
・ If you don't mind spicy chili pepper
・ A little sesame oil
[How to make]
Preparation: Mix ketchup, soy sauce and peanut cream. Peanut cream is OK even if a little lump remains.
① Put the pork top in a frying pan, add potato starch and sprinkle it all over. Spread the hardened pork here.
② Add sesame oil and fry. Fry while loosening with chopsticks so that the meat does not stick to each other.
③ When the meat is 80% cooked, peel the cabbage and put it in.
When the cabbage becomes soft, add grated garlic and stir-fry. When the garlic smells, add the sauce and stir-fry.
⑤ If you don't mind being spicy, add some chili peppers.

If it's too sweet, add a little soy sauce.
If you are okay with spicy, it is recommended to sprinkle with chili peppers!

「黄金比っていろいろあるけど、結局どれを覚えたらいいの?」と迷う方へ。私は“用途別に1つずつ”決めておくと、レシピ検索の沼から抜けやすくなりました。今回の「醤油:ケチャップ:ピーナッツ=1:1:2」は、豚こま・鶏もも・厚揚げ・ちくわみたいに“コクが欲しい食材”に特に相性が良いです。包丁まな板も出したくない日は、キャベツは手でちぎってOK。むしろタレが絡みやすくておいしいことが多いです。 よく聞かれるのが「和風炒めにしたい時、何を足せばいい?」という点。私は“最後に香りを足す”のが簡単だと思っています。ごま油をほんの少し仕上げに回しかける、または白すりごまを振るだけで、ぐっと和風寄りに。逆にアジアン風を強めたいなら、にんにくを少し増やすか、ラー油を数滴たらします。 同じ“黄金比”でも、三杯酢の黄金比率を覚えておくと副菜が一気に増えます。私の定番は、酢:しょうゆ:砂糖=2:1:1。きゅうりとわかめ、タコ、薄切り玉ねぎで和えるだけで立派な一品になります。甘さ控えめが好きなら砂糖を少し減らしても大丈夫。作り置きにする時は、先に野菜の水気をしっかり絞るのがコツです。 あと、海鮮丼のタレ黄金比もよく使います。しょうゆ:みりん=1:1をさっと煮切って(レンジでもOK)、冷めたら少しだけごま油やすりごまを足すと、家でも“それっぽい味”になります。わさびを溶かしてもおいしいです。 最後に失敗しにくいポイント。ピーナッツクリームはメーカーで甘さが違うので、絡める前に必ず味見をしています。甘いと感じたら醤油を小さじ1ずつ足すと調整しやすいです。辛いのが大丈夫なら一味唐辛子は本当におすすめで、甘みが締まって「止まらない味」に近づきます。覚える黄金比は多くなくて大丈夫。まずはこの1:1:2を“自分の鉄板”にしてみてください。
