Northern pig
The way to make raw northern pork labs (raw labs) is to bring finely ground pork meat (popularly using ridge meat) to mingle with fresh pork blood, northern chili labs, boiled offal, and folk herbal vegetables such as bamboo vegetables, parsley to get spicy, spiced aromatic, and soft sticky, with the trick being to chop the pork until sticky and blood crumpled with lemongrass leaves to quench the fishy.
Main ingredient
Fresh pork / red meat (finely chopped until sticky) 500g
1-2 cups fresh pig's blood (or buffalo blood)
Boiled pork offal cooked (filling, liver, pork skin) small slice 200 grams
Northern Lada Chili (Intense Recipe) 3-4 tablespoons
Herbal Vegetables: Bamboo Alley Vegetables, Parsley, Scallions, Peppermint Leaves
Condiment: Salt, fish sauce (as liked)
Fishy Quenching Herbs: Lemongrass Leaf (for blood crushing), Fine Alley Lemongrass
Making steps
Prepare Blood: Bring fresh pig's blood to crumple with the lemongrass leaves, and then filter out the lemongrass leaves, to deodorize the fishy smell and lightly clot the blood.
Pig chop: Chop pork as thoroughly as possible, or use a grinder (pork must be sticky at).
Mixing: Bring chopped pork meat and mix it with northern chili lab pork blood, salt and boiled offal.
Add herbs: Put lemongrass, alley bamboo, parsley and onion on it. Mix it together again.
Serving: garnish with peppermint leaves, and dine with fresh vegetables such as soft-topped Cantonese lettuce, gooseberry leaves, fried dried chili peppers.
