I preheat my grill to medium-high, sear each side for about 3-4 minutes, and then let it rest. Resting is crucial for any backstrap, allowing those juices to redistribute for maximum tenderness. For a slightly different approach, especially if you have a thicker cut, you could try roasting. I'd sear it first in a hot pan to get that beautiful color, then transfer it to a preheated oven at around 375°F (190°C) until it reaches your desired internal temperature. Again, don't forget to rest it! This method works wonders for both venison and elk backstrap recipes, ensuring a tender, juicy result. Now, you might be wondering about the difference between venison backstrap and a beef back strap. Venison is typically much leaner than beef, which means it can dry out quickly if overcooked. That's why I stress quick cooking methods and not overdoing it. Beef backstrap (which is often called a beef tenderloin or eye fillet) has more fat content, making it a bit more forgiving. However, the principles of searing, seasoning, and resting apply to both. For venison, adding a bit of fat to the pan (like butter or bacon fat) can also enhance flavor and moisture. When I prepare my backstrap, whether it's from deer or elk, I always make sure to trim off any silver skin. This tough membrane doesn't break down during cooking and can make the meat chewy. A sharp knife and a little patience go a long way here.
