Circle or Square?
I hate wasting anything, so if I have too many leftover herbs, I use them in egg bites or potato cakes (a post for another day).
Ingredients (makes 24)
Bacon
Green onion & parsley chopped
12 eggs
2 C milk
3/4 C Sour cream
Shredded Cheddar Cheese
1 Tbsp Hidden Valley ranch mix
1 Tsp Badia Complete Seasoning (or anything that has onion & garlic)
1 Tsp Paprika
Salt & Pepper
Steps
Preheat oven to 350 (I use convection bake)
Chop and fry bacon, and set aside. Save the bacon grease to grease your muffin tins.
Place all ingredients in a bowl and mix vigorously with a whisk or fork. **I add the bacon to the bowl last so that it's has time to cool and doesn't start cooking the eggs before it hits the oven.
Grease muffin tins with bacon fat or fat of choice.
Scoop into muffin trays to 3/4's full
Bake for 20-23 mins. keep an eye on it after the 20 min mark.
✨ Tips: True to my zero waste policy, I save the bacon grease and use it the same week for roasting potatoes or frying anything. It's actually amazing in salad dressing for a broccoli salad too! It stretches your dollar a lot farther, especially on bacon and oils.
