I stumbled upon this Mexican delight recently, and it’s quickly become a favorite for a quick, comforting meal or even a sweet-savory snack. For those unfamiliar, Tortitas de Platano Macho are essentially sweet plantain fritters. The 'macho' part refers to the larger, starchier variety of plantain, which when ripe, becomes wonderfully sweet. The magic truly happens when they are RELLENAS DE QUESO – yes, stuffed with melty cheese! The combination of the caramelized sweetness of the ripe plantain with the salty, gooey cheese inside is absolutely divine. It’s a flavor explosion that balances sweet and savory perfectly, creating a DELICICOSA experience with every bite. Making them might sound intimidating, but trust me, it's simpler than you think. You'll want to pick plantains that are very ripe, almost entirely black, as this ensures maximum sweetness and easy mashing. Boil or steam them until tender, then mash them into a smooth, slightly sticky dough.
