High Protein Chicken Salad 🍗🥗
This high protein chicken salad has 40 g of protein, packed with fibre and easy to make! Recipe makes 4 servings
Ingredients:
16 oz cooked chicken breast, shredded or diced ½ cup plain Greek yogurt
1 cup cottage cheese
½ cup pomegranate arils
¼ cup walnuts, chopped
¼ cup diced onion
2 celery stalks, diced
1 tsp all-purpose seasoning Salt and pepper to taste
Method: Blend the cottage cheese, Greek yogurt, all-purpose seasoning, salt, and pepper until smooth. Add the cooked chicken to a large bowl. Pour the blended dressing over the chicken and mix until evenly coated. Fold in the pomegranate, walnuts, onion, and celery. Chill for 10–15 minutes if desired, then serve.
