Ingredients 🧈🥚

crust

-1 ½ sticks butter melted

-2 ½ cups graham cracker crumbs

-¼ cup sugar

-½ teaspoon salt

cake

-1 ¾ cups flour

-2 cups sugar

-¾ cup cocoa

-2 tsp baking soda

-1 tsp baking powder

-1 tsp salt

-2 eggs

-2 tsp vanilla

-1 cup buttermilk

-½ cup oil

-1 cup coffee

ganache

-5 oz dark chocolate

-¾ cup heavy cream

-3/4 cup sugar

-5 tbsp softened butter

-½ tsp salt

-½ tsp vanilla

marshmallow buttercream

-1 cup softened butter

-7 oz marshmallow fluff

-2 tsp vanilla

-3 cups powdered sugar

marshmallows for topping

Instructions 📝

1. Preheat oven to 350 F. Grease two 8in cake pans & line with parchment paper

2. Mix all crust ingredients together & evenly distribute between pans. Press down mixture until flat

3. Bake crust for 10 mins or until slightly brown. Let cool

4. In a large bowl, mix dry cake ingredients until combined

5. Add eggs, buttermilk, oil & vanilla. Mix until combined. Once combined, add coffee

6. Pour batter over graham cracker crust & bake for about 30 mins. Let cool completely

7. For ganache, add chocolate, butter, salt & vanilla in bowl

8. Heat cream & sugar over medium heat just before boiling. Pour mixture over chocolate & let sit for 1 min. Mix until smooth & let sit in fridge

9. For buttercream, add butter, marshmallow & vanilla to a bowl. Beat until combined

10. Once fully combined, add powdered sugar on low speed. Scrape down sides of bowl & beat on med-high & mix for about one minute until light & fluffy

Assembling

1. Place layer of cake crust side down. Spread a layer of buttercream on top. Pipe a layer of buttercream around edge of cake & fill the middle with cooled ganache. Place cake in fridge until ganache has set

2. Once ganache is set, spread another layer of buttercream on top. Place second layer of cake on top, crust side down

3. Frost cake with remaining buttercream. Pour cooled ganache on top. Sprinkle graham cracker crumbs on top. Place cake in fridge until ganache has set

4. Top cake with desire amount of marshmallows/ fluff & toast 😊

*be very careful when removing cakes from pan after they have baked (I lost a layer 😭) it is also very important to let the ganache set up completely in fridge/freezer when assembling. & the buttercream recipe is only enough to fill cake & crumb coat so if you want more frosting I would double the recipe.
