Our last fall cake of the year 🤎

Ingredients 🧈🥚

Spice cake

-3 cups all-purpose flour

-2 tsp baking powder

-½ tsp baking soda

-½ tsp salt

-2 tsp ground cinnamon

-2 tsp ground ginger

-½ tsp ground cloves

-½ tsp ground nutmeg

-2 cups packed light brown sugar

-1 cup vegetable oil

-1 cup unsweetened applesauce

-½ cup buttermilk

-4 eggs

-1 tsp vanilla

Caramel sauce

-1/2 cup sugar

-1/4 cup water

-100ml heavy cream

-3 tbsp butter

-1/2 tsp vanilla

Apple filling

-3 apples

-3 tbsp unsalted butter

-1/3 cup brown sugar

-1 tsp cinnamon

-1 tbsp cornstarch

Caramel buttercream

-1 lb unsalted butter, at room temperature

-8 cups powdered sugar (2 lbs)

-2 tsp vanilla

-1/4 tsp salt

-1/4 cup heavy cream

-1/2 cup caramel sauce

Instructions 📝

Cake

1. Preheat the oven to 350°F. Spray three 8-inch cake pans with baking spray.

2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.

3. In another bowl, whisk together the brown sugar, oil, applesauce, buttermilk, eggs, and vanilla until smooth. Pour the wet mixture into the dry mixture and whisk just until combined. Divide the batter evenly between the two pans.

4. Bake for about 20 minutes, or until the center gently springs back when touched. Let the cakes cool in the pans for 10 minutes, then remove them & let cool completely.

Caramel

1. Mix together water & sugar in a heavy bottomed sauce pan.

2. Place on stove on medium heat. When it starts to boil, gently swirl pan around every 30 seconds (do not stir)

3. Once mixture has reached an amber color, take off heat & carefully add in heavy cream. Whisk well.

4. Add in butter & vanilla & whisk until smooth

5. Transfer to heat proof container & let cool completely before using

Apple filling

1. Peel & chop apples. In a saucepan over medium heat, melt butter. Add the apples, brown sugar, cinnamon, and cornstarch. Heat until the apple mixture starts to bubble. Heat for 5 minutes until mixture thickens

2. Cool the apple filling completely before using.


Caramel buttercream

1. In a stand mixer fitted with paddle attachment add all butter, salt & vanilla to bowl & blend. Scrape down bowl.

2. Add ½ of the powdered sugar in stages

3. Add all of the whipping cream & caramel sauce & blend. Scrape down bowl.

4. Add the rest of the powdered sugar in stages until it is blended in. Scrape down bowl.

5. Whip it on high for about 2-4 minutes depending on the strength of your mixer. The icing will go much lighter in color, fluffier and a good spreading consistency.
