Transgender Apple Hand Pies

Pie Dough
440g all purpose flour
114g cold unsalted butter
102g cold vegetable shortening
2 tsp sugar
1 tsp salt
6 tbsp cold milk
In a large bowl combine flour, sugar, and salt. Mix together using a whisk. Add butter (cut into cubes), and vegetable shortening (cut into cubes). Using your fingers squeeze and work the butter and shortening to into the dry ingredients until butter resembles the size of peas. Add milk and toss with your hands until it comes together as a dough. Divide the dough in half. Place the first half on a sheet of cling wrap, land roll it out to about 1/4th of the desired thickness. Cover the dough entirely with cling wrap, and place in a Ziploc bag. Repeat with second portion of dough. Refrigerate for 2 hours or overnight.
Apple Filling
2 apples
1 Tbsp butter
1 1/2 Tbsp cornstarch
30g brown sugar
30g sugar
1/2 tsp vanilla
1/2 Tbsp cinnamon
Combine all ingredients together in a saucepan and stir until all apples are coated. Heat over medium heat and bring to a simmer. Continue to heat for an additional 1.5-2 minutes, then remove from heat and set aside to cool.

Preheat the oven to 350F. Roll out the pie dough to about 1/4 inch thickness. Cut dough into desired shape for pies. Make sure to cut a top and bottom layer for each pie, and a middle layer that has a cutout in the middle to allow space for filling. Add some holes to the center of the top portions of dough. Freeze all dough briefly for 5-10 minutes.
Brush egg whites along the edges of the bottom layer of dough, then stack the middle barrier layer on top. Spoon filling into the center, then brush egg whites along the edges, and add the top layer of dough. Seal the pies by pressing a fork along the edges.
