•Premature Garlic Harvest•

So for starters, I am a VERY novice gardener, so I’m still learning! Having said that, I was unaware that garlic should really be planted in late fall for a spring harvest.

So, I decided to go ahead and harvest what I’ve got now, and replant in October. The garlic I harvested is still perfectly usable!

I decided not to cure these, and put them straight to use by mincing the bulbs finely and covering them with oil in a jar for everyday cooking use. My husband is a big fan of “jar-lic” so I made him a better version of it!

Then, I decided to keep the garlic stems and pickle them in a brine of vinegar, salt and sugar, and supplement with peppercorns, fresh sliced jalapeño and dill. It will take a few days to be ready!

So proud to turn this planting snafu into zero waste goodness!

... Read moreGarlic is a versatile and essential ingredient in many kitchens, but growing it successfully requires proper timing and care. Typically, garlic should be planted in late fall to allow the bulbs to develop underground during the winter months and be ready for harvest in the spring or early summer. Planting too early or too late can affect the size and quality of the garlic bulbs. If you find yourself with a premature garlic harvest, as described in the article, it’s important to know that the garlic is still usable and can be transformed into delicious and practical products instead of letting it go to waste. One popular method is making garlic-infused oil, which preserves the flavor and can be used in everyday cooking. To ensure safety, it’s best to store garlic oil in the refrigerator and consume it within a week to prevent botulism risks. Another innovative way to use garlic stems is pickling. The brine recipe featuring vinegar, salt, sugar, peppercorns, jalapeños, and dill adds a unique tangy flavor while extending the shelf life of the stems. Pickled garlic stems are great additions to salads, sandwiches, or as condiments, offering a crunchy alternative with a mild garlic taste. For novice gardeners, learning about the correct planting schedule is vital. Planting garlic cloves in October allows them to establish roots before the cold sets in. Covering the planting bed with mulch can protect the cloves from freezing temperatures and support steady growth. Moreover, embracing zero waste approaches, as the author did, by using both garlic bulbs and stems fully, supports sustainable gardening and reduces kitchen waste. Repurposing imperfect or premature harvests encourages a mindful approach to food and gardening. For those who enjoy growing their own food, joining communities or hashtags like #growinggarlic, #growyourfood, and #gardening101 can provide additional support, tips, and recipe ideas to enhance gardening success and culinary creativity. By understanding the garlic growth cycle, experimenting with creative recipes, and adopting sustainable practices, gardeners can maximize their yields and enjoy fresh, homegrown garlic year-round.
