•Premature Garlic Harvest•

So for starters, I am a VERY novice gardener, so I’m still learning! Having said that, I was unaware that garlic should really be planted in late fall for a spring harvest.

So, I decided to go ahead and harvest what I’ve got now, and replant in October. The garlic I harvested is still perfectly usable!

I decided not to cure these, and put them straight to use by mincing the bulbs finely and covering them with oil in a jar for everyday cooking use. My husband is a big fan of “jar-lic” so I made him a better version of it!

Then, I decided to keep the garlic stems and pickle them in a brine of vinegar, salt and sugar, and supplement with peppercorns, fresh sliced jalapeño and dill. It will take a few days to be ready!

So proud to turn this planting snafu into zero waste goodness!
