Pork Chop Duxelle 🐖🍄‍🟫🧈

It took a little while to finely chop all the mushrooms & the pork chop were so thin that I decided to stack them, adding the Duxelle in the middle. Well worth it!!

I made a gravy using the pan drippings, some stock, a slurry & adding in the rest of the Duxelle!

Served over rice & a side of garlic asparagus 👩🏽‍🍳💋

Pork Chop Duxelle:

✨ 2 tbl Butter

✨ Mushrooms (finely chopped, you need ALOT!! Imagine how much you actually want…. then double that! Mushrooms are mostly water weight so they’ll shrink a lot. )

✨ 1/2 an Onion ( finely chopped)

✨ 2 tbl minced Garlic

✨ Salt, Pepper, Oregano, Thyme

✨ Pork Chops ( season well )

✨ Cooking Twine

💥 In a pan, melt butter then add in finely chopped onions, garlic & mushrooms

💥 Cook down until all water has evaporated, then season well

💥 Lay out pork chops, add some Duxelle, then top with another pork chop ( save remaining Duxelle for gravy )

💥 Using the cooking twine, tie together to ensure the Duxelle will remain inside

💥 In a hot pan, brown on all sides ( save the drippings to make gravy )

💥 Bake for 20 minutes at 375°

💥 Remove from oven, cut off all the twine

💥 Put back into oven to broil about 5-10 minutes to add more color

💥 Serve over rice & top with gravy
