The best trick I ever learned is to freeze your tomatoes as you pick. Then, when you have the time to work them, pull them out to thaw. As they thaw, they lose a great deal of water, and the skins peal off easy. the loss of water makes the cooking time to make your sauce much less. #canned tomat
