It's a staple in Mexican cuisine, and for good reason – it's simple, incredibly flavorful, and warms you right up from the inside out. When I'm looking for something wholesome and quick to make, this is often my first thought. And if you're like me, you absolutely love finding those cute star fideo noodles, which give this soup its signature look and delightful texture. The secret to a rich, flavorful broth and perfectly al dente noodles is toasting your fideo first. This simple step browns the pasta slightly, preventing it from getting mushy and adding a nutty depth to the soup. I usually toast my star fideo in a little bit of oil, either vegetable or olive, in a pot over medium heat until it's golden brown – keep stirring so it toasts evenly! This usually takes just a few minutes, but it makes all the difference in the final taste and texture of your sopa de fideo. My go-to recipe is incredibly straightforward. It usually starts with a base of blended tomatoes, a quarter of an onion, and one or two cloves of garlic. I blend these until smooth, then strain the mixture into the pot with the toasted fideo. This creates a vibrant red sauce base. Then, I add about 4-6 cups of chicken or vegetable broth – whatever I have on hand!
