* 2–3 lbs oxtail
* 1 can butter beans
* 1 onion (chopped)
* 3 cloves garlic (minced)
* 2 green onions
* 1 tsp thyme
* 1 tsp paprika
* 1 tsp allspice (pimento)
* 1 tbsp soy sauce
* 1 tbsp browning sauce (optional but 🔥)
* 1 tbsp ketchup
* 1 tsp sugar
* 1 Scotch bonnet pepper
(or habanero like I told you earlier 👀)
* 1 cup beef broth
* 1 carrot (sliced)
* Salt & pepper
* Oil for browning
👩🍳 Step-by-step (easy version)
1. Season + marinate (IMPORTANT)
Mix oxtail with:
* salt, pepper, thyme, paprika, allspice
* garlic, onion, green onion
* soy sauce, browning sauce
👉 Let sit at least 1 hour (overnight = BEST)
2. Brown the meat (don’t skip!)
* Heat oil in a pot
* Brown oxtail on all sides

3. Cook low & slow
* Add beef broth + ketchup + sugar
* Add whole scotch bonnet (don’t cut if you want less heat)
👉 Cover and simmer:
* Stovetop: 2.5–3 hours
* OR pressure cooker: ~45 minutes

After meat is tender:
* Add carrots + butter beans
Cook another 15–20 mins
5. Thicken the gravy (optional)
