Cottage cheese blueberry muffins 🫐

Recipe:

- 1 cup blended cottage cheese

- 2 eggs

- 1/2 cup coconut oil

- 1/2 cup maple syrup

- 1/4 cup monk fruit

- 1 cup GF flour

- 1/4 cup coconut flour

- 1 cup blueberries

- 1 tsp baking powder

- 1/2 tsp baking soda

Crumble

- 1 tbs coconut sugar

- 1 tbs coconut flour

- 1-2tbs coconut oil

preheat your oven to 350F.

blend 1 cup of cottage cheese & 1 egg until completely smooth

Place your blended cottage cheese into a large bowl.

Add in your coconut oil, maple syrup and monk fruit and mix well. Add your last egg in and combine completely.

Add your dry ingredients in and fold to combine. Lastly add in your blueberries and fold them in.

Top with crumble

Bake at 350° for 22-27 minutes
