Hotpot is a much-loved communal dish that brings friends and family together around a bubbling pot of flavorful broth. One of the keys to a memorable hotpot experience is the base broth, which sets the tone for all the ingredients you cook. From my own cooking adventures, I found that using beef tallow as a starting fat creates a luscious, rich base that really amplifies the depth of flavor. To start, melt the beef tallow and then add a generous amount of soybean oil to help with frying the aromatics. Following that, I add fresh chili peppers to introduce some heat and balance the richness of the fats. Once the spice blend is sufficiently fried and fragrant, I include Sichuan peppercorns, which provide that characteristic numbing sensation that complements the heat perfectly and adds to the authenticity of a traditional hotpot base. This process of layering flavors—from beef tallow to aromatic vegetables, fermented pastes, fresh chilis, and spices—ensures the hotpot base is rich, spicy, and aromatic. It may take some practice, but the result is rewarding. Hosting a hotpot with this homemade base has always been a hit among my friends and family.
