Ingredients

1 lb (450 g) ground beef
1 medium onion, finely chopped
3 cloves garlic, minced
1–2 tbsp olive oil (optional, if beef is very lean)
1 tsp chili powder
1 tsp smoked paprika
1 tsp cumin
½ tsp dried oregano
½ tsp cayenne pepper (optional, for heat)
Salt & pepper to taste
1 cup canned black beans or refried beans (optional, adds creaminess)
1 cup corn kernels (fresh, frozen, or canned)
½ cup diced green chilies or jalapeños (optional)
1 cup shredded cheddar, Monterey Jack, or Mexican cheese blend
For the Sauce
(You can use canned enchilada sauce, but homemade makes it richer.)
3 tbsp vegetable oil or butter
3 tbsp all-purpose flour
2 ½ cups chicken or beef stock
3 tbsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika
½ tsp sugar (balances acidity)
2 tbsp tomato paste
Salt & pepper to taste
For Assembly
8 medium flour or corn tortillas (flour is softer, corn is more traditional)
2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
Fresh cilantro, chopped (for garnish)
Sour cream, avocado, lime wedges (for serving)
🔪 Step-by-Step Instructions
1. Make the Enchilada Sauce
In a saucepan, heat oil over medium heat.
Whisk in flour to form a roux; cook 1–2 minutes until lightly golden.
Add chili powder, cumin, paprika, garlic powder, onion powder—stir for 30 seconds to release aroma.
Slowly whisk in stock to avoid lumps.
Stir in tomato paste and sugar. Simmer 10–12 minutes until thickened. Season with salt & pepper.
Tip: Sauce should be pourable but not watery. Adjust with more stock if too thick.
2. Cook the Beef Filling
Heat a skillet over medium-high heat. Add beef and cook until browned, breaking it apart. Drain excess fat if needed.
Add onion, cook until softened (4–5 min). Add garlic, stir 30 sec.
Season with chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper.
Stir in corn, beans, and green chilies. Cook 2–3 min.
Remove from heat. Mix in 1 cup shredded cheese to bind filling.
3. Assemble the Enchiladas
Preheat oven to 375°F (190°C).
Lightly grease a 9x13-inch baking dish.
Spread ½ cup enchilada sauce on the bottom of the dish.
Warm tortillas (microwave 20–30 sec wrapped in a damp towel) to prevent tearing.
Place 2–3 tbsp beef filling in each tortilla. Roll tightly and place seam side down in the dish.
Once all are arranged, pour remaining sauce evenly over top.
Sprinkle with 2 cups cheese.
4. Bake
Cover with foil and bake for 20 minutes.
Remove foil and bake another 10 minutes until cheese is golden and bubbly.
5. Garnish & Serve
Let rest 5 minutes before serving (helps them hold shape).
Garnish with fresh cilantro, sour cream, avocado slices, or lime wedges.
