Beef & Cheese Enchiladas

Brown 1 lb of 93/7 lean ground beef in a pan over medium heat.

Once cooked, add in 1 can of enchilada sauce. Mix around until fully coated.

Add in 3/4 cup of shredded cheese. Mix until cheese is melted.

We added in peppers and onions as well, but you don’t have to!

Add half a can of enchilada sauce to the bottom of a 9 x 13 pan (spread it around so the bottom of the dish is completely coated).

Divide beef mixture evenly into low carb tortillas. Roll in place seam side down into the pan.

Add the other half of the can of enchilada sauce on top. Add another 3/4 cup of shredded cheese.

Bake at 350° for 20 to 25 minutes.
