I had the pleasure of making this gorgeous number for my mums birthday. It is a lemon cake filled with pockets of curd, coated in a citrus sugar, then finished with a vanilla bean cream cheese, lemon curd, mini burnt meringues, dried lemon slices, edible gold leaf and a touch of baby’s breath .
