Birth of the tea tree (Camellia sinensis)

Tea plants have a history of thousands of years, native to mountainous areas of southern China, Burma and northeastern India; archaeological evidence and historical records suggest that tea leaves have been used as drinks and herbs since more than 4,000 years ago; in nature, tea plants can be several meters high, but cultivation to collect the leaves is trimmed to low for ease of harvesting.

There are 2 main varieties of tea species, Camellia sinensis var. sinensis, which has small leaves, is resistant to cold air, suitable for planting in high-altitude areas such as China and Japan, and Camellia sinensis var. assamica, which has large leaves, thrives fast, fits hot, humid areas such as India and Sri Lanka. It is currently mixed across species to achieve qualities suitable for each region.

ประสบการณ์ส่วนตัวในการเรียนรู้ถึงต้นกำเนิดและสายพันธุ์ของต้นชา Camellia sinensis ทำให้ผมเข้าใจถึงความลึกซึ้งของวัฒนธรรมการดื่มชาในหลายภูมิภาคได้มากขึ้น ชาที่เราเห็นในตลาดมีที่มาจากสองสายพันธุ์หลัก คือ Camellia sinensis var. sinensis กับ var. assamica ซึ่งแต่ละแบบเหมาะสมกับสภาพอากาศและพื้นที่ต่างกันอย่างชัดเจน จากการลองปลูกและตรวจสอบการเจริญเติบโตของต้นชา ผมพบว่าใบชาแบบ sinensis เหมาะกับพื้นที่สูงและอากาศเย็น เช่นในจีนตอนใต้และญี่ปุ่น ซึ่งใบจะมีขนาดเล็กและเน้นกลิ่นหอมละเอียด ส่วนสายพันธุ์ assamica เจริญเติบโตได้ดีในสภาพอากาศร้อนชื้นอย่างอินเดียและศรีลังกา ใบใหญ่กลางหวานซึ่งเหมาะกับการผลิตชาดำและชาหมัก นอกจากนี้ การผสมข้ามสายพันธุ์เพื่อให้ได้ชาคุณภาพสูงที่สุดก็เป็นเรื่องที่น่าสนใจอย่างมาก เพราะช่วยให้ต้นชาปรับตัวเข้ากับภูมิประเทศและสภาพอากาศได้ดีขึ้น และคุณภาพของใบชาเองก็ดียิ่งขึ้น เช่นเดียวกับมัทฉะพรีเมียมที่ได้รับความนิยมอยู่ในตลาดไทยและต่างประเทศ ในฐานะผู้ที่ชื่นชอบชามานาน ผมจึงสนับสนุนให้ทุกคนลองศึกษาถึงที่มาของชาและสายพันธุ์ เพื่อเข้าใจรสชาติและคุณค่าที่แท้จริงของเครื่องดื่มที่เราโปรดปรานนี้ รวมถึงการเลือกซื้อจากแหล่งที่มีความน่าเชื่อถือ อย่างร้านที่มีบริการข้อมูลและปรึกษาเกี่ยวกับชาเขียวมัทฉะอย่างชัดเจน เพื่อให้ได้ประสบการณ์การดื่มชาที่ดีที่สุด
