Roasted Greek Power Bowl
This bowl was so yummy and also jam packed with healthy ingredients!
For the base of this bowl I took sweet potatoes, brussel sprouts, and chickpeas and seasoned to my liking and then roasted them in the oven at 425 for about 40 mins.
I took some mixed salad greens tossed in olive oil and red wine vinegar and lemon juice and also added those in to the base.
I topped this off with some feta cheese and a chopped up turkey burger, but you could also just use ground turkey meat too.
For the yummy sauce I made a classic tzatziki sauce with Greek yogurt, lemon juice, chopped cucumber, and lots of dill!
