Slice & bake ice cream sandwiches

Slice & bake ice cream sammies!! 🐣🐰 So good & so easy — the softness of the cookies makes for a perfect ice cream sandwich layer 👌

To make them, press the cookies to the edges of a small pan and bake for 10-12 minutes. Repeat twice for each cookie layer and set them aside to cool fully.

For the ice cream, press it down to the edges of a pan that was the same size you used for the cookies so they fit together nicely. If you’d like, top with a layer of sprinkles. Let it refreeze for at least an hour.

After the cookies have cooled & your ice cream is frozen into the right shape, layer them and freeze *again* for at least 2-3 hours, up to overnight. This step is important so they’re easy to slice into.
