Breakfast Tacos

I have to say tacos are one of my all-time favorites. You can really make them so many ways! These are definitely not traditional, but that's for another post. It is sometimes fun to create food outside of the box.

You'll need:

● tortillas

● 1lb ground sausage

● 3 potatoes, diced

● 4 pieces Canadian bacon

● 5 eggs, scrambled

*optional toppings: cheese, jalapenos, sour cream, hot sauce, onions*

1.) Wash and dice potatoes

2.) Heat a skillet with enough oil to cover the bottom for potatoes. Start cooking them first so you can get a good crisp. Cook to your desired crispness

3.) Heat a skillet over medium-high heat for sausage. Cook for 8-10 minutes or until cooked through

4.) Scramble eggs and cooked to your desired softness.

5.) Cook Canadian bacon for 10-15 minutes

6.) Plate and add toppings to your desire.
