Turn a potato to a meal
In this case, I used sweet potato, which is one of my favorites. It was so easy to top and turn this potato into a meal. Saves on dishes and time.
You'll need
● 4 bonless pork chops
● 2 large sweet potatoes
● 2 cups BBQ sauce, I used Bull's-Eye
● 3/4 tsp garlic powder
● 1/2 tsp paprika
●1/2 tsp salt
●1/2 tsp pepper
● 1/4 cup brown sugar
● Shredded cheese to your liking
● Crispy jalapeno salad topping
1.) I cooked my own pulled pork from boneless pork chops. I placed 4 bonless chops in a lined crockpot with salt and pepper and cooked on high for 4 hours. At this point, I drained the excess liquid and placed pork back into the crockpot to shred. Add bbq sauce, brown sugar, garlic powder, and paprika. Cover and cook another 30 minutes.
2.) Bake sweet potato at 400° for 45-60 minutes until it is fork tender. I wrapped mine in foil and covered in butter. Be sure to poke holes into the potato.
3.) When potato is done, slice and top with pork, cheese, and crispy jalapenos.
Additional toppings if desired: sour cream, butter, brown sugar, Sriracha ranch, Chipotle sauce.
