This is the split pea soup I grew up with.

So much comfort in one bowl.

Sometimes the food that raised us

is exactly what we need again.

TRADITIONAL SPLIT PEA SOUP (Step-by-Step)

Ingredients:

- Split peas (soaked)

- Salt (to taste) and black pepper

- 1 pack bacon

- 1 medium white onion

- 1 large carrot

- 5 baby bell peppers

- 3 celery sticks

- 3 garlic cloves, minced

- 1 tsp black pepper

- 5 green onions, thinly chopped

- Heavy cream (for serving)

- Fresh basil (for topping)

Step 1: Soak the peas

- Soak split peas in cold water for 4 hours, until softened and increased in size. Rinse well.

- Step 2: Start the soup

Add peas to a pot with fresh water.

Season with salt and bring to a medium-high simmer.

- Step 3: Cook the bacon

Fry 1 pack of bacon strips until crisp.

Remove, let cool slightly, chop into bite-size pieces, and add to the soup.

- Step 4: Prepare the vegetables

Chop the following into small, even cubes (pea-size):

- 1 white onion

- 1 large carrot

- 5 baby bell peppers

- 3 celery sticks

Sauté vegetables in the bacon grease until tender and fragrant.

- Step 5: Combine

Add sautéed vegetables to the soup.

Cook for 10 minutes.

- Step 6: Final seasoning

Add:

3 cloves minced garlic

1 tsp black pepper

5 green onions

Stir well and let simmer for another 10 minutes.

- Step 7: Rest & serve

Turn off heat and let soup rest for 10 minutes.
