A classic Oliv’e salad I grew up with and still make whenever we crave something creamy and comforting.

OLIVIER (OLLIV'E) SALAD — STEP-BY-STEP

Ingredients:

• 3 potatoes

• 4 carrots

• 6 eggs

• ½ Asian fresh cucumber

• 1 cup pickled cucumbers

• 1½ cups veal bologna

• 1 medium onion

• 1 can sweet peas (rinsed)

• Salt & black pepper, to taste

• ~3 tbsp European mayonnaise

Instructions:

1. Boil potatoes, carrots, and eggs until tender.

2. Peel everything and let cool.

3. Cube potatoes, carrots, and eggs into even bite-size pieces.

4. Add to a large bowl.

5. Cube and add:

• Fresh cucumber

• Pickled cucumbers

• Veal bologna

• Onion

6. Add rinsed sweet peas.

7. Season with salt and black pepper to taste.

8. Add mayonnaise and mix gently until well combined.

9. Chill for about 1 hour.
