❤️🧡💛Rainbow Breakfast Bowl Recipe💚💙💜

I love this breakfast we use so many colorful veggies 🥰

Ingredients

- 4-5 yellow gold potatoes, chopped (Sweet Potatoes are also good!!)

- 1 green pepper, chopped

- 1 red pepper, chopped

- 1 yellow pepper, chopped

- 1 orange pepper,chopped

- 1 cup cherry tomatoes, halved

- 1 pound ground turkey

- Olive Oil

- 6 eggs

- Seasonings, fresh cracked pepper ,salt , garlic and herb, paprika, garlic powder, onion powder, crushed red chili flakes, parsley flakes, and a little bit of slap ya mama seasoning if you like spicy

I season with my heart ♥️

Instructions:

1. **Preheat Oven:** 400°F (200°C).

2. **Prep Veggies:** Chop potatoes, peppers, and tomatoes. Season and mix well.

3. **Roast Veggies:** Spread on a baking sheet and roast for 30 to 40 minutes or until fork-tender. Stir once ( add foil for easy cleanup.)

4. **Cook Turkey:** Cook ground turkey in a skillet and season as desired. Remove

5. **Scramble Eggs:** Scramble eggs in the same skillet.

6. **Combine:** Mix roasted veggies, turkey, and scrambled eggs in a big bowl.

7. **Portion:** Divide into six meal prep containers.

This should give you around six meal prep containers worth that’s enough for three days worth of breakfast for me and my hubby. Microwave for about a minute and a half and it’s also super good with a drizzle of hot honey 😋Enjoy!
