Ingredients:

2 oz white rum

2 oz coconut cream

2 oz pineapple juice

1 oz fresh lime juice

1/2 cup fresh dragon fruit (pitaya), cubed

1 tbsp honey

Ice

Coconut whipped cream

Dragon fruit balls (scooped with a melon baller)

Pineapple leaf

Edible flower (orchid or similar)

Pink pitaya powder for garnish

Instructions:

In a blender, combine white rum, coconut cream, pineapple juice, lime juice, dragon fruit cubes, and honey.

Add 1 cup of ice to the blender.

Blend until smooth and creamy, about 30 seconds.

Rim a large hurricane glass with lime juice and dip in pink pitaya powder.

Fill the glass with the blended mixture.

Top with a generous dollop of coconut whipped cream.

Garnish with 2-3 dragon fruit balls on a cocktail pick.

Dust the top lightly with more pink pitaya powder for color.

Place a pineapple leaf and an edible flower on the side of the glass for tropical flair.

Serve immediately with a wide eco-friendly straw and a long spoon for the fruit.
