📒Notes: A little spicy 🌶️ Cincinnati
I used to think meal prep meant bland, boring food, but discovering the magic of perfectly sautéed onions completely changed my perspective! Especially when it comes to dishes like this amazing high-protein chicken and shrimp fajitas bowl, those tender, flavorful onions (and bell peppers!) are absolutely essential. If you're like me and want your meal prep containers to be as delicious as they are convenient, mastering the art of sautéing is a must. So, why are sautéed onions such a meal prep star? Beyond adding incredible depth and sweetness, they bring a wonderful aroma and texture that really elevates simple ingredients. They're also packed with antioxidants and fiber, making them a healthy boost for any meal. I’ve found that taking a little extra time to get them just right makes a huge difference in the overall enjoyment of my prepared meals, especially for my weight loss journey. Here are my top tips for achieving that perfect sauté for your meal prep: Choose Wisely: For fajitas, I usually go for yellow onions, but red onions can add a nice color and sharper flavor. Make sure to slice them evenly so they cook at the same rate. Don't Rush It: The key to truly delicious sautéed onions is patience. I start with a medium-low heat with a good olive oil or avocado oil. This allows them to slowly soften and caramelize without burning. Season as You Go: A pinch of salt and pepper when they first hit the pan helps draw out moisture and enhances their flavor. Sometimes, I even add a tiny bit of sugar towards the end for extra caramelization, especially if I'm aiming for that sweet, tender finish. Avoid Crowding: This is crucial! If you pack too many onions into the pan, they'll steam instead of sauté, leading to a watery, mushy texture. Cook them in batches if necessary, ensuring they have enough space to brown nicely. My goal is always translucent and slightly browned, not soggy. Cool Completely: Before adding your sautéed onions to your meal prep containers, make sure they've cooled down entirely. This prevents condensation from building up, which can make your meal soggy and reduce its shelf life. I often cook a big batch of sautéed bell peppers and onions at the start of the week. Once your onions (and peppers!) are perfectly sautéed and cooled, integrating them into your meal prep containers is simple. For my chicken and shrimp fajitas bowls, I usually layer the rice (if using, sometimes I skip it for a lower carb option!), then the protein, followed by a generous serving of the sautéed vegetables. If I'm including grilled corn, that goes in next. This layering helps keep everything neat and makes for a visually appealing meal when it's time to eat. And don't limit yourself to just fajitas! Perfectly sautéed onions are incredibly versatile for meal prep. I often use them as a base for quick weeknight stir-fries, folded into breakfast scrambles or omelets, or as a topping for grilled chicken or fish. They also make a fantastic addition to grain bowls or even as a flavorful component in a hearty salad. It’s all about making healthy eating enjoyable and sustainable. Trust me, once you nail the sauté, your meal prep game will be forever changed!
