My goal was to make healthy eating as convenient as grabbing a fast food fruit cup, but with way more freshness and nutrients. The secret? A colorful assortment of fresh fruits prepped and ready to go! I absolutely love seeing my fridge stocked with those beautiful black meal prep containers filled with vibrant watermelon, juicy berries, sweet grapes, tangy kiwi, and bright oranges. It makes starting a mini fruit fast or just having a healthy fruit for lunch incredibly easy. Here’s how I tackle my weekly meal prep to ensure I have delicious fruit on hand: First, selection is key. I go for a variety of colors and textures to get a wide range of vitamins and minerals. Think beyond just apples and bananas! My favorites often include watermelon chunks, whole grapes, sliced kiwi, a mix of strawberries and blueberries, and peeled oranges. Sometimes I'll add pineapple or cantaloupe too. The more colorful assortment, the better! Next, cleaning and cutting. This is where those cut fruit containers become indispensable. I thoroughly wash all my fruits. For berries, I give them a gentle rinse. For larger fruits, I peel and chop them into bite-sized pieces that are easy to eat on the go. For example, watermelon gets cubed, kiwi is peeled and sliced into rounds, and oranges are segmented. To prevent browning on fruits like apples (though I mostly stick to non-browning fruits for this prep), a quick dip in lemon water can help, but I usually just aim to eat them within 3-4 days.
