... Read moreI recently tried making Buckeye Brownie Cookies at home, and I was thrilled with how they turned out. The combination of a fudgy brownie-like cookie with a smooth peanut butter topping and a luscious chocolate and butterscotch glaze truly creates an indulgent treat. When making the dough balls, I found it helpful to chill them slightly before baking to prevent spreading and keep their shape. For the brownie batter, using Dutch-process cocoa powder gave the cookies a deep, rich chocolate flavor that chocolate lovers will appreciate. The mix of white and brown sugar adds a perfect balance of sweetness and moisture to keep the cookies soft and chewy. The peanut butter topping is key to achieving the classic Buckeye taste. I recommend using a smooth peanut butter for a creamy texture, and beating it thoroughly with butter and powdered sugar to create a thick, spreadable layer. Topping the peanut butter layer with melted chocolate chips combined with butterscotch chips adds a delightful twist — the butterscotch brings a subtle caramel note that complements both the peanut butter and chocolate beautifully. These cookies are fantastic served slightly warm or at room temperature, making them an excellent choice for parties or as a special homemade gift. Plus, they freeze well, so you can prepare a batch in advance and enjoy them later. For a variation, you can experiment by adding chopped nuts to the peanut butter topping or substituting the butterscotch with white chocolate chips for a different flavor twist.
