I took my juicy shredded birria and loaded it into a crispy baked potato boat with melty cheese and toppings… and I’m not gonna lie… this might be a top-tier remix.

Don’t get me wrong, tacos will always be elite.

But something about birria on a loaded potato hits DIFFERENT.

If you still have leftover birria juice, don’t throw it away. That’s flavor you can build meals around.

What really elevates the dish is the birria consommé or juice, which you can drizzle over the potato for an extra burst of flavor or use for dipping, keeping the dish moist and flavorful. One of my favorite tricks is to experiment with toppings. Adding diced onions, fresh cilantro, a squeeze of lime, and some pickled jalapeños adds brightness and a little heat. You can even add a dollop of sour cream or guacamole for extra richness. This loaded potato boat is not just a remix, but a creative way to enjoy leftover birria in a hearty, satisfying form.
