Many of us, myself included, struggle to get enough fiber – and adding vegetables is a fantastic way to boost both fiber and essential nutrients. Personally, I used to think vegetables were just for lunch or dinner, but incorporating them into my breakfast routine has been a game-changer for sustained energy and overall well-being. If you're looking to elevate your morning meal from simply high-protein and high-fiber to a truly balanced feast, here are some super easy ways I've found to sneak in those extra veggies: Eggs & Scrambles: This is probably the easiest entry point! While cooking your eggs, toss in a handful of spinach, diced bell peppers, onions, or mushrooms. They cook down quickly and add a ton of flavor and nutrients without much effort. I often pre-chop a mix of these veggies on Sunday, so they're ready to go for the week. Smoothies: Don't knock it 'til you try it! A handful of spinach or kale often goes completely unnoticed in a fruit smoothie, especially if you use berries. Frozen cauliflower is another secret weapon – it adds creaminess and fiber without altering the taste, and you'd never know it's there! Savory Oats or Grain Bowls: While sweet oatmeal is classic, savory oats are a delicious way to get veggies in. Sauté some grated zucchini or carrots with your oatmeal, or top a warm grain bowl (like quinoa or farro) with roasted sweet potatoes, avocado, and a sprinkle of greens. Breakfast Burritos/Tacos: Load up your morning wrap with scrambled eggs, black beans (for extra fiber!), and plenty of sautéed onions, peppers, and even some leftover roasted broccoli or cauliflower from dinner.
