Tropical Yogurt Parfaits (Healthy, High Protein)

This is a unique and refreshing tropical parfait with Tajín, pineapple and mango!

A healthy snack or well-balanced breakfast if you love that combination of sweet and salty with a little bit of spice.

Ingredients:

2 cups Greek yogurt, plain vanilla, coconut, or pineapple flavors would work as well

1 medium or large ripe mango, diced into cubes

1 cup diced fresh pineapple or, pineapple tidbits drained

1-2 teaspoons Tajín seasoning

Juice of 1/2 a lime

2 tablespoons honey

Hemp hearts, chopped nuts, or granola – optional for crunch

Directions

Prep the fruit: In a bowl, toss the diced mango and pineapple with a squeeze of fresh lime juice and 1 tsp of Tajín. Let sit for 5–10 minutes to allow the flavors to combine.

Layer the parfaits: In 2 glasses or jars, spoon a layer of Greek yogurt, followed by a drizzle of honey, and a layer of Tajín-spiced fruit. Repeat layers as desired.

If you are preparing these parfaits as a snack, add 1/2 cup of Greek yogurt as the base. Then, top with fruit and drizzle with honey.

Top and garnish: Finish with a drizzle of honey, a pinch more Tajín on top (optional), and granola, chopped nuts, or hemp hearts for texture. Again, optional – easily customize however you prefer.

Serve immediately or store in an airtight container for up to 4 days.
