Dark Chocolate PB Dates with Protein Powder

This is my unique spin on the stuffed Snickers dates but with a little extra protein by adding some protein powder to the peanut butter. The most insanely delicious protein snack or dessert!

They're rich, decadent, chewy and feel so indulgent but they're actually very nutritious.

Each date has 7 grams of protein and 3.5 grams of fiber. Both dates + dark chocolate have anti-inflammatory properties.

Ingredients

12 pitted Medjool dates I used Natural Delights and found them to be very soft.

1/4 cup creamy peanut butter can use crunchy for more texture

2 scoops protein powder Unflavored works best for more peanut butter flavor, vanilla works too

3 ½ tablespoons water or milk

1 cup dark chocolate chips

1 teaspoon avocado or coconut oil

Coarse sea salt for garnish fine sea salt would work too

Chopped nuts, optional topping

Directions

Get ready for assembly. Line a plate or baking sheet with parchment paper. With a small knife, make a lengthwise slit in each date, slicing about 3/4 the way down. Sometimes, the dates have a seam already that you can just pull apart or use your knife to cut through it.

Mix the protein powder and peanut butter together. Heat the peanut butter in the microwave to soften – about one minute (microwaves may vary). Add the protein powder and water. Stir really well until a thick yet well-combed mixture forms. Fill the dates with peanut butter. Fill each date with a heaping spoonful of peanut butter and place on the baking sheet.

Microwave the chocolate. Add dark chocolate and avocado oil to a microwaveable bowl. Microwave in 30 second increments, stirring each time, until the chocolate is melted.

Dip the dates. Using a (slotted) spoon, toothpick, or two forks, dip each date into the bowl of chocolate – coating the entire date in dark chocolate. Place back onto the parchment paper lined baking sheet. Microwave the chocolate for another 30 seconds as needed during this process.

Sprinkle each date with sea salt.

Freeze or refrigerate to set. Place the baking sheet into the fridge or freezer for at least 20 minutes to set

Store in the freezer for up to 3 months! They definitely won’t last that long, though!

You see all these amazing recipes for stuffed dates, but sometimes the 'how-to' of actually prepping the dates themselves gets glossed over. But trust me, once you get the hang of it, opening and pitting Medjool dates becomes second nature, and it truly unlocks a world of healthy, delicious possibilities, like these dark chocolate peanut butter protein bites! The main goal is to safely remove the large, hard pit nestled right in the center of your beautiful Medjool date. This makes them much more pleasant to eat, especially when biting into a decadent treat, and safer too. No one wants an unexpected crunch! Here’s how I usually tackle this: I pick up a soft, plump Medjool date – the softer they are, the easier the pit usually comes out. I grab a small, sharp paring knife. Carefully, I make a single lengthwise slit down one side of the date, going about two-thirds or three-quarters of the way through. You'll often find a natural seam on the date, which is a great guide. It’s like the date is already giving you a hint on where to make your cut! Once the slit is made, you can gently pry the date open with your fingers. The pit should be clearly visible, nestled within the fleshy fruit. Sometimes, if the date is very soft and ripe, you can just gently squeeze the date, and the pit will pop right out. Other times, I use the tip of my knife or my thumb and forefinger to gently lift and remove the pit. Be careful not to tear the date completely in half if you plan on stuffing it, as you want to create a nice little pocket for your filling. The goal is to keep the date mostly intact, creating a perfect 'canoe' shape for whatever deliciousness you're adding. For this recipe, since we're using a generous amount of peanut butter and protein powder, having well-prepared, pitted Medjool dates is key. That lengthwise slit creates the ideal opening for stuffing. I've found that using high-quality dates, like the Natural Delights brand mentioned in the recipe, makes a huge difference. They tend to be consistently soft and easy to work with, which means less effort in the pitting stage and more time enjoying your homemade dark chocolate dates anti-inflammatory with protein powder treat! It's fascinating how such a large pit is hidden inside these sweet fruits! While the pit itself isn't edible, understanding how to remove it efficiently is the first step to truly appreciating Medjool dates in cooking. When you're at the store, look for dates that feel plump and slightly sticky, not hard or shriveled. These are usually fresher and much easier to open and remove the pit from. Sometimes, you might find dates already labeled 'pitted,' but I personally prefer to pit them myself. This way, I can ensure they're perfectly sliced for stuffing and haven't been processed in a way that might dry them out. Don't worry if your first few dates don't look perfect – practice makes perfect! Soon enough, you'll be a pro at opening and pitting Medjool dates, ready to transform them into healthy snacks, desserts, or even savory dishes. Once you have your perfectly prepped Medjool dates, the rest of the recipe for these incredible dark chocolate peanut butter protein bites is a breeze. That little pocket you created by removing the pit is just waiting to be filled with the creamy, protein-packed filling.
