Recipe makes 10-12 popsicles.
Ingredients
Vanilla Greek Yogurt (3 cups). I used Oikos Triple Zero.
Vanilla Protein Powder (2-3 scoops). I highly recommend Optimum Nutrition Vanilla Ice Cream Protein Powder for this recipe.
Sprinkles (about 1/4 cup). Rainbow sprinkles are perfect for that “birthday cake” look but you could definitely get creative with different kinds of sprinkles! Think red, white and blue for Fourth of July.
Strawberries (about 3/4 cup), diced small.
White Chocolate Chips (1/4 cup).
Honey (1-2 tablespoons), optional – amount used dependent on how sweet your protein powder is and per your sweetness preference.
Water (1/4 cup), optional – if you want a thinner consistency to spoon into the molds.
Optional additions: hemp hearts, chia seeds, flaxseeds, vanilla extract or vanilla bean paste
Directions:
Add Greek yogurt, vanilla protein powder, and honey to a large bowl. Use a whisk to combine ingredients until smooth and well combined.
Fold in strawberries, sprinkles and white chocolate chips with a spatula.
Pour or spoon into the popsicle molds, tapping the mold gently on the counter to remove air pockets and ensure an even consistency. Or, you could use a piping bag or Zip-Loc Bag – spoon the mixture into a piping bag or a zip-top bag, snip off a corner, and squeeze it into the molds. This helps prevent spills. You can also add water or milk to make the mixture thinner and easier to pour/spoon.
Refrigerate for at least 6 hours.
Remove from freezer. Carefully remove each popsicle from the mold, running the mold under hot water if needed. These popsicles taste best as they melt and become more creamy. Making these Birthday Cake Funfetti Protein Popsicles has been such a joyful experience for me and my family, especially during warm weather when we crave something refreshing yet nutritious. What I love about this recipe is how easy it is to customize based on your preferences and what you have in your pantry. For instance, adding hemp hearts, chia seeds, or flaxseeds not only boosts the nutritional profile but also adds interesting textures. One tip I found helpful is using a piping bag or a Zip-Loc bag to fill the popsicle molds. This trick really helps prevent spills and ensures an even distribution of the mix with all the sprinkles, strawberries, and white chocolate chips. Also, tapping the molds gently to remove air pockets makes for a smoother final texture. We usually prepare these popsicles in the afternoon and let them freeze for at least 6 hours. When it’s time to enjoy them, I run the molds under warm water briefly to release the popsicles easily without breaking them apart. My kids especially love watching the colorful rainbow sprinkles swirl as the popsicles melt, creating a creamy, dreamy treat. From a nutrition standpoint, using a high-quality vanilla protein powder like Optimum Nutrition Vanilla Ice Cream Protein really makes a difference in flavor and protein content. The Greek yogurt base adds creaminess and probiotics, making these popsicles a wholesome snack that balances fun and health. If you prefer a thinner consistency for easier pouring, water or milk can be added, but I recommend not over-thinning so they maintain the creamy texture. Overall, these protein popsicles are perfect for moms wanting to combine a fun kitchen activity with a healthy snack option for their kids. They’re also easily adaptable for themed celebrations by swapping sprinkles—for example, red, white, and blue for the Fourth of July—making them a versatile choice year-round. Give this recipe a try, and you might discover a new family favorite that’s both enjoyable and nourishing!
