This Week’s Meal Prep (High Protein & Fiber)

Because summer is really kicking my butt this week, I stuck to just two low prep meal prep recipes.

💕Salted Caramel Apple Overnight Oats. This is a new recipe and sooo insanely good. Usually I get sick of overnight oats after 1-2 meals but I ate all 4 jars!

💕Chicken Fried Rice Casserole. SO simple yet with the right sauces it tastes as good as takeout (but way healthier).

Both of these recipes on my website (in bio) or comment “PREP” or whichever recipe you want below and I will send you a message!

I've personally found that keeping my meal prep simple, nutritious, and flavorful helps me stay on track with my health goals without feeling overwhelmed. The Salted Caramel Apple Overnight Oats combine the cozy flavors of fall with a summer-friendly, ready-to-eat breakfast that you can prepare in minutes the night before. Adding apple pieces to your oats not only boosts fiber content but also provides natural sweetness and crunch. The salted caramel flavor brings an indulgent twist that keeps this meal exciting—perfect when you're tired of the usual plain oats. On the savory side, the Dump & Bake Chicken Fried Rice Casserole is a game changer. It’s incredibly easy to put together in one dish, saving on cleanup and time. Using lean chicken, mixed vegetables, and flavorful sauces, this casserole packs in protein while keeping calories in check. The best part is how it satisfies those takeout cravings but with healthier ingredients and better nutritional value. What I appreciate most about these recipes is their flexibility—feel free to swap ingredients based on what you have on hand. For example, adding extra veggies or swapping chicken for tofu can tailor the meals to your preferences without sacrificing nutrition. Both meals store well in the fridge for grab-and-go convenience, making your busy weekdays less stressful. In my experience, focusing on meal prep that balances macronutrients while being easy to prepare makes a huge difference in maintaining energy and fullness throughout the day. Whether you’re a beginner or seasoned pro at meal prepping, these two recipes deliver satisfying meals with minimal effort during hot summer weeks.
