Red Beans & Rice 🫘 🍚
RED BEANS & RICE 🫘 🍚
INGREDIENTS
—1 lb raw kidney beans; rinsed 🫘
—Holy trinity: 1 onion, 1 bell pepper, 2-3 sticks of celery
—2-3 tbsp of garlic 🧄
—2 lbs of smoked sausage
—1/2 lb of Tasso (optional)
—7 cups of water
—32 oz chicken broth
—Season to taste: Cajun seasoning, salt, parsley and 2-3 bay leaves
—Cooked rice 🍚
DIRECTIONS
1. Brown sausage & Tasso in your magnalite or soup pot. Remove.
2. Add holy trinity & garlic to the drippings and sauté.
3. Add Tasso and sausage back to the pot.
4. In a separate pot, add 5 cups of water and 32 oz of chicken broth. Bring to a boil.
5. Add kidney beans and boil for 10 minutes.
6. Transfer kidney beans, water and chicken broth into the pot with the Tasso, sausage and veggies.
7. Add 2 cups of cold water and the seasonings. Mix well.
8. Bring to a boil and mix.
9. Turn the heat down to low/simmer. Cover and let it cool for 2 hours.
10. Remove some of the beans and mash.
11. Return mashed beans to pot and stir. This helps thicken it.
12. Serve over rice.
