Tropical Blend Wine
Tropical Blend Wine (Pineapple, Mango & Passionfruit)
A tropical medley of juicy pineapple, sweet mango, and tart passionfruit.
Ingredients:
• 1 lb fresh pineapple (chopped)
• 1 lb fresh mango (peeled and mashed)
• 2 passionfruits (pulp only)
• 2 ½ lbs sugar
• 1 tsp acid blend
• 1 tsp pectic enzyme
• 1 tsp yeast nutrient
• 1 Campden tablet
• 1 packet wine yeast (Lalvin K1-V1116 recommended)
• 1 gallon water
Instructions:
1. Prepare Fruit: Mash pineapple, mango, and passionfruit pulp in a sanitized fermenting bucket.
2. Dissolve Sugar: Heat water, dissolve sugar, and cool. Pour over the fruit mixture.
3. Add Ingredients: Stir in acid blend, pectic enzyme, and yeast nutrient. Add a crushed Campden tablet and let sit for 24 hours.
4. Ferment: Add yeast and ferment for 5-7 days. Strain into a jug with an airlock.
5. Bottle and Age: Bottle and age for 4-6 months for a vibrant, tropical wine.
6.Vanilla beans during secondary fermentation for a more pronounced flavor.
7. For an extra layer of complexity, you could lightly toast the vanilla bean before adding it to enhance its depth of flavor.
8. Start with 7–10 days of infusion, then taste the wine. Remove the bean when you achieve your desired level of vanilla flavor to avoid overpowering the tropical notes.
