... Read moreI’ve found that using fully cooked pineapple teriyaki chicken meatballs from Trader Joe’s truly cuts down on prep time while keeping the meal tasty and satisfying. Cooking the meatballs in the air fryer at 350°F for 12 minutes gives them a nice crispy texture that pairs perfectly with the sweet and tangy Soyaki sauce and pineapple chunks. Using frozen jasmine rice bags makes the process even easier, while steaming or lightly sautéing broccoli florets adds a fresh and healthy side. For meal prepping, this recipe is fantastic because it yields about six servings, making it ideal to portion out for the entire week. I usually pack my meals in airtight containers and keep them refrigerated; reheating them in the microwave maintains the flavors surprisingly well. The balance of protein from the meatballs, carbs from the rice, and fiber from the broccoli keeps me full and energized throughout the day. Additionally, if you don’t have access to Trader Joe’s products, similar items from other brands work just as well. You can also tweak the recipe by adding extra veggies like bell peppers or snap peas to boost nutrition further. The sweet pineapple combined with the savory Soyaki sauce creates a delightful flavor contrast that makes this meal anything but boring. It’s a great go-to for anyone looking for a quick, easy, and nutritious meal prep solution that doesn’t require many ingredients or hours in the kitchen.
