Funeral Potatoes (sometimes also known as party potatoes or cheesy potato casserole)
30 oz frozen hashbrowns (I let it sit out for 20 mins)
2 cups sour cream
2 cans cream of chicken soup
2 cups cheddar cheese
1/2 c melted butter
2 cups corn flakes
Layer 1/2 hash browns on the bottom of a 9x13 pan. On the side in a medium bowl mix sour cream and cream of chicken soups and spoon half of mixture onto hashbrowns in pan. Then layer a cup of cheese. Repeat layers - rest of hashbrowns, rest of soup mixture and then rest of the cheese. On top add crushed corn flakes and pour on melted butter. Bake at 350 for 45ish minutes. Check to make sure hash browns are cooked through and the corn flakes aren’t burnt. Enjoy!

Funeral Potatoes is a beloved comfort food often served at gatherings and family meals, offering a creamy, cheesy potato casserole that’s both easy to prepare and crowd-pleasing. The combination of frozen hashbrowns and sour cream creates a creamy base that complements the savory flavor of cream of chicken soup and sharp cheddar cheese. One tip I’ve found helpful is to let the frozen hashbrowns sit out for about 20 minutes before assembling the casserole to thaw slightly; this step helps the layers bind better and cook evenly. When layering, alternating between the hashbrowns, sour cream and soup mixture, and cheese builds up generous flavor throughout the casserole. The final topping of crushed corn flakes mixed with melted butter adds a wonderful crunchy texture contrast to the creamy layers beneath. Baking at 350°F for roughly 45 minutes ensures the casserole is hot and bubbly with a golden crust, but it’s important to check the potatoes are fully cooked through and the corn flakes topping doesn’t burn, as oven temperatures may vary. For variations, some people like to add cooked bacon bits or diced onions for extra flavor and texture. You can also swap cream of chicken soup for cream of mushroom for a different taste profile. This dish is versatile and can be served as a comforting side or a main course paired with a light salad to balance richness. Overall, Funeral Potatoes is a nostalgic and easy-to-make casserole that delivers warm, satisfying flavors, making it a go-to for potlucks, family dinners, or any occasion where comfort food is welcomed.
