Well, I used to think they were super complicated to make at home, but I finally nailed down an easy peasy recipe that I just HAVE to share with you all! Trust me, once you try these homemade ramen eggs (Ajitsuke Tamago), your ramen bowls will never be the same. My Go-To Recipe for Perfect Ramen Eggs: The key to these beauties is getting that perfect jammy yolk and a flavorful marinade. Here's how I do it: Ingredients: 6 large eggs (straight from the fridge is fine!) 1/2 cup soy sauce (I prefer low sodium) 1/2 cup mirin (sweet rice wine) 1/4 cup water 1-2 tablespoons sugar (adjust to your sweetness preference) Optional: a slice of ginger or a clove of garlic for extra flavor in the marinade Instructions: Boil the water: Grab a medium saucepan and fill it with enough water to cover your eggs. Bring it to a rolling boil. Add the eggs: Carefully lower your eggs into the boiling water using a slotted spoon. This is crucial for avoiding cracks! Timing is EVERYTHING: For that perfect jammy, soft-boiled yolk, I boil my eggs for exactly 6 minutes and 30 seconds. If you prefer a slightly firmer yolk, go for 7 minutes. Marinate: Place your peeled eggs into a Ziploc bag or a container that's just big enough to hold them snugly. Pour the marinade over the eggs, making sure they are fully submerged. If they aren't, you can gently rotate the bag periodically. Chill Out: Seal the bag and refrigerate for at least 6 hours, but ideally overnight (12-24 hours) for maximum flavor. The longer they marinate, the deeper the color and taste. I usually make them the day before I plan to eat them! Quick Tip for Eggs Cooked Directly in Ramen: If you're in a hurry and just want a simple egg in your instant ramen, here's what I do: Boil your water, add your noodles and seasoning. About 1-2 minutes before your noodles are done, carefully crack an egg directly into the simmering broth. Cover the pot and let it cook for 1-2 minutes for a runny yolk, or longer for a firmer one.
