Ingredients:

For the Soup:

1 large head of cauliflower, chopped into florets

1 tablespoon olive oil

1 large onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon curry powder

1/2 teaspoon turmeric

1/2 teaspoon ground cumin

1/4 teaspoon cayenne pepper (optional, for heat)

1 can (14 oz) coconut milk (full-fat or light)

3 cups vegetable broth (or chicken broth)

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Lime wedges, for serving (optional)

Instructions:

Prepare the Cauliflower

Preheat your oven to 400°F (200°C). Toss the cauliflower florets with olive oil and a pinch of salt, then spread them evenly on a baking sheet. Roast for 25-30 minutes, or until tender and slightly browned.

Cook the Aromatics

In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened and translucent, about 5 minutes. Add the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.

Add the Spices

Stir in the curry powder, turmeric, ground cumin, and cayenne pepper (if using). Cook for 1-2 minutes, stirring constantly to release the aromas of the spices.

Combine and Simmer

Add the roasted cauliflower to the pot, followed by the coconut milk and vegetable broth. Stir to combine and bring the soup to a simmer. Let it cook for 10-15 minutes to allow the flavors to blend.

Blend the Soup

Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth. Once blended, return the soup to the pot and adjust the seasoning with salt and pepper to taste.

Serve

Ladle the creamy cauliflower soup into bowls and garnish with fresh cilantro. Serve with lime wedges on the side for an extra burst of flavor.
