INGREDIENTS

8 cups water

½ cup white or light miso paste 8 cloves garlic, finely grated

2 tablespoons fresh ginger, grated

1 tablespoon fresh horseradish root, grated

2 teaspoons avocado oil or coconut oil

2 tablespoons raw apple cider vinegar

1 teaspoon ground turmeric

½ teaspoon sea salt

Juice of 1 large lemon

Zest of ½ lemon, optional 1 scallion, thinly sliced

INSTRUCTIONS

In a bowl, mix garlic, ginger, horseradish, turmeric, vinegar, oil, and salt into a fragrant paste.

Bring water to a gentle boil, then reduce to a simmer.

Whisk miso with ½ cup hot water until smooth.

Stir the miso into the flavor paste.

Turn off the heat and whisk the miso mixture into the hot water.

Add lemon juice and zest. Do not boil after adding miso.

Serve warm with sliced scallions.
