Recipe
1. Arrange the leafy vegetables so that they crawl on the bottom or wall of the steamer.

私が「蒸し野菜レシピ」を続けられている一番の理由は、切って並べて蒸すだけで一品が成立するところ。特に“ボウル(=肉だんご)”をどんと真ん中に置くスタイルは、見た目の満足感が出やすくて、忙しい日の救世主です。 せいろで蒸し野菜をおいしくするコツは、下に葉野菜(キャベツや白菜)を敷いて「蒸気の通り道」を作ること。底に直接固い野菜を置くより、ふわっと蒸気が回ってムラが減ります。さらに私は、にんじん・赤ピーマンみたいな“濃い色”を少し入れると、手抜きでもちゃんとしたごはんに見えるのでよくやります。 「ひき肉 せいろ蒸し」で失敗しやすいのは、肉だんごが固くなること。パサつきが気になるときは、鶏ひき肉にみりんを少し多めにしたり、玉ねぎを肉だね側に少し混ぜ込むとふんわりしやすいです(包丁が面倒なら粗みじんじゃなくてもOK)。あと、肉だねはぎゅうぎゅうに握らず、スプーンで“落とす”くらいのゆるさだと蒸しても柔らかいまま。 蒸し時間は、野菜の切り方で調整します。じゃがいもやさつまいもは薄め、にんじんは細めに切ると、肉ボールと同じ10分前後で一緒に仕上がってラク。逆に、なすやピーマンは大きめでも火が入りやすいので「ざくざく」で十分でした。 味つけは、蒸した後に“つけダレ”で変化をつけると飽きません。私はポン酢+ごま、醤油+すりごま+ラー油、マヨ+味噌少し、のローテが多いです。せいろは素材の味が出るので、濃い味にしなくても満足しやすいのも好きなところ。 最後に、洗い物を減らす小技。肉だねはパックの上で混ぜる、野菜はまな板が面倒な日はキッチンばさみで切る、せいろの下にはクッキングシートを軽く敷いて汚れを防ぐ…このへんを組み合わせると、ほんとに「楽で美味しい」が続きます。手抜きでも自分の機嫌が取れる“楽かわいい”蒸しごはん、ぜひ試してみてください。
